From diabetes and heart health to gluten-free and gut-friendly, you’ll learn how you can help others transform a limitation into an inspiration.
Whether you’re supporting a client through a new diagnosis or simply wanting to learn more about cooking, you’ll leave this session with meal-building strategies and cooking techniques to keep food the way it should be: joyful and nourishing.

Joe Libassi is a professional chef based in Philadelphia, PA, with over 17 years of experience in the culinary arts. Coming from a family of cooks, he enjoys creating dishes inspired by a wide range of global cuisines. Known for his versatility in the kitchen, Joe is dedicated to making food accessible and enjoyable by accommodating dietary needs without sacrificing flavor. For him, cooking is more than a profession—it’s a way to connect with others. He believes that sharing good food with the people you love is one of life’s greatest gifts.
Kellie Lunday is AFPA’s nutrition content lead and a registered dietitian with nearly a decade of experience in corporate wellness, health education, and performance optimization. She received her MS in Nutrition from Texas Woman’s University and completed her dietetic internship at The University of Texas in Austin. Kellie currently serves as the Nutrition Content Lead for AFPA. Previously, she has worked in various roles at Exos and the University of Texas at Austin. She is passionate about travel, global cuisines, fitness, and advancing consumer health through evidence-based education.
